Course Description

Allergen Management - 1 Day; Cost $450 per person.  Effective allergen management and preventionof cross-contamination require the implementation of good manufacturing practices, a HACCP-based food safety system and an effective allergen management plan.  A developed system for the management of allergenic materials to reduce risk of contamination and meeting FDA labeling requirements is necessary to comply with the requirements of the Food Safety Modernization Act and GFSI certification.  Learn how to control potential sources of food allergen risk and manage allergens in your plant.
