The U.S. Food and Drug Administration announced that routine inspections of small businesses to verify compliance with the FDA Food Safety Modernization Act (FSMA) Intentional Adulteration (IA) rule will begin in March 2021. The IA Rule is aimed at preventing intentional adulteration from acts intended to cause wide-scale harm to public health, including acts of terrorism targeting the food supply. Each covered facility is required to prepare and implement a food defense plan.

Module One: The Goals of the FDA’s FSMA Intentional Adulteration Rule

Module Two: Food Defense Workshop: What Do You Do in the Event of an Increased Threat Announcement to the Food Supply?

Module 3: Unboxing IA Rule 21 CFR Part 121

According to the IA rule, individuals assigned to work at actionable process steps and their supervisors are required to receive training in food defense awareness (21 CFR 121.4(b)(2)). This course is designed specifically for those individuals and meets the food defense awareness training requirement of the IA rule.

Module 4: Food Defense Qualified Individuals: Understanding the Requirements

Training, experience and educational requirements are discussed.

Module 5: Process Flow Diagrams and Identifying Actionable Process Steps

We cover utilizing your process flow diagram as a guide when developing actionable process steps and identifying vulnerabilities in the production process.

Module 6: Conducting Your Vulnerability Assessment Utilizing the Key Activity Type (KAT) Hybrid Method

This module is targeted to food professionals using FDA’s Key Activity Type (KAT) method to conduct their facility’s vulnerability assessment (VA).

Module 7: Assigning Mitigation Strategies to Your Vulnerabilities

Learn how to assign strategic mitigation measures to reduce the identified risk and how to utilize the FDA's Food Defense Mitigation Strategies Database to complete your assessment.

Module 8: Vulnerability Assessment Workshop

Module 9: Corrective Actions, Reanalysis and Building Your Food Defense Plans

Learn how to utilize the FDA’s Food Defense Plan Builder in conjunction with your vulnerability assessment.
